    In that situation, I’d see what I could do about having someone (friends, relatives, personal chef) making up large portions of healthy foods and freezing them in small containers. Commercial TV dinners are not cheap, and with the money saved by buying and cooking in bulk, you might be able to hire someone to do the actual cooking and freezing. Local social service organizations might be able to recommend suitable cooks.

    Then to these healthier main courses, you could add some uncooked carrots, fresh fruit, etc.

    The problem is that all the top 15 dinners/breakfasts on the daily meal site are great for low sodium and adequate protein but are such small quantities and total calories that you can’t be more than 100 pounds to feel satisfied. I also do not cook but it is difficult to find frozen dinners with sufficient portions that do not overdo the sodium. Not good for seniors. Nor does a couple pieces of broccoli provide even one serving of veggies. Just thinking that it may work to buy two of Amy’s dinners and have both at once and then it may work!

    Cooking and eating food is easier for me in a modular fashion because, I’ll be honest, I’m lazy by nature. But the easiest way for me to get good food is to make it myself. If I were Ken, the best advice I’ve heard so far is Gretchen’s. Ask for help. People love to feel needed and when you ask for help you may be surprised at how much they enjoy being helpful to you.

    Great meal ideas that are delicious and won’t break the bank are things like taco salad, chili, and healthy soups. All of these can be made in bulk and frozen for use anytime. And it’s easy to add fresh vegetables to taco meat served with brown rice and re-fried beans. The added bonus is that you know exactly what you’re eating and for me, as a Type 1 diabetic, it’s a relief to say with certainty–this 367 g (weight in grams) bowl of chili has thirty grams of carbs!

    The other thing that is VERY helpful is to have a carb staple you always have on hand. I have a huge bag of brown rice and a microwave rice cooker that I’ve used maybe 5 times and I get perfect rice every time. Keep a bottle of teriyaki or two in the fridge and pick up frozen pieces of pre-cooked chicken and you can have chicken and rice in five to seven minutes. (My favorite Teriyaki is Wasabi Teriyaki). Add a salad and a half piece of fruit and you’ve got a great go-to meal.
