Love the fact you focused on a Gluten Free Diet. I have written a book also on the subject http://www.drbaxtermontgomery.com/diabetes-nutritional-guide/.

Both of my guys have Celiac Disease, Down syndrome and one has type 1 diabetes. I love your article and have posted it on my Facebook so hopefully my friends will understand more about the disease. Yep, it is more prevalent in people with Down syndrome too.

Hi Cait – the closest I’ve come to puff pastry [crescent rolls] is a ‘no fail’ recipe for either creme puffs / yorkshire pudding – depending on how you shape the dough it’s about as close as I’ve come – found it years ago shortly after graduating from university – it always disappears – whether with gravy / butter or strawberries! let me know if you’re interested – the most expensive thing in this is probably the hydro / muscle power!

This is a well written post. Several of my family members have been diagnosed with Celiac, so there is much discussion at family gatherings about which desserts to eat. : ) It sounds like the worst of it was explaining to everyone.
